Discard

As you embark on your sourdough journey, you’ll find yourself discarding some starter before each feeding. I hesitate to even use the word “discard” because this stuff is golden! Don’t throw it away! You can save it in a separate container in the fridge. It lasts for… a very long time. Even if you neglect it for a while and notice weird liquid on top, don’t worry. Just pour that off, stir it up and you’re good to go. There are countless recipes into which you can incorporate discard. Here are a few of my favorites!
